Bacon Avocado Soup is a low carb dieter’s dream soup. Broth-y, bacony, yummm! This might be our favorite Keto soup, ever.
Bacon Avocado Soup is a unicorn of soups. By that we mean it is the unexpected combination of flavors with the ability to be served hot or cold. We personally prefer it to be served slightly warm but really does work wonderfully as a gazpacho if you personally like chilled soups. I’ve never really been on the chilled soup bandwagon myself but I know many people who do.
How do you make Bacon Avocado Soup?
This soup is fairly straightforward to make. You’ll need: Chicken stock, cilantro, garlic powder, avocados, lime, bacon, salt and pepper.
To start, you’ll need to bring your chicken stock to a low boil. In a blender, you’ll mix your cilantro, garlic powder, avocados, lime juice and 1 cup of the chicken stock. Blend until smooth, then add to the stock on the stove. Next you’ll add your cooked bacon pieces. Stir your soup well and salt and pepper to taste. Be sure to add your salt a little bit at a time to get the flavor just right.

How long is Bacon Avocado Soup good for?
I would strongly advise this be a ‘consume-the-same-day’ type of soup. If you have any leftovers transferring to an airtight container and all a little bit extra lime and store in the refrigerator for 24 hours.
You also can opt to freeze this soup. I personally would go this route if there are any leftovers. Avocado actually freezes fabulously.
We recommend using something we find very helpful when it comes to freezing soup. These Souper Cubes (affiliate link) are the bomb! These will allow you to freeze portions of soup and then place into freezer bags. Your soup will be good for around 3 months in the freezer. To thaw, place a portion in the refrigerator in a freezer bag/propped up in a bowl to avoid spillage. If you are a fan of gazpacho bacon avocado soup this is fab!

What to Serve With Low Carb Bacon Avocado Soup

We’ve found that when we haven’t consumed enough fat we go for either this or our fat bomb chicken (or fat bomb pork) and it gets us right where we need to be with our macros.

Ingredients
- 4 cups chicken stock or broth
- 1/3 cup loosely packed, fresh chopped cilantro
- 1 tsp. garlic powder
- 2 medium avocados, pitted
- 1/2 medium lime, juiced
- 1/2 lb. bacon, cooked and broken into small pieces
- 1 tsp salt (to taste)
- 1 tsp pepper (to taste)
Instructions
In a medium to large pot, bring the chicken stock to a low boil. (If serving warm)
Place the cilantro, garlic powder, avocados and lime juice in a blender.
To the blender, add 1 cup of the chicken stock (warm or cold).
Blend until smooth, then stir it into the rest of the stock.
Add the bacon.
Season with salt and pepper to taste and serve.
